Simple Recipes: Tuna Buckwheat Salad

Right now I am all about the quick and simple recipes, and even better if that recipe is healthy and tasty. I’ll be honest, while I love cooking I’m not much of a cook, preferring to make simple things or rely or a recipe.  Of course, with a nearly six month month old in the house, I don’t want to spend precious time whipping up something too complicated so I have a few ‘go-to’ recipes. I thought I’d share these with you in the hope that you might find a new go-to recipe too.

Recently I’ve been loving salad for lunch, although lets be honest salad greens aren’t super filling. I’ve been bulking my salad up with buckwheat which adds a bit of filler and substance and is also high in protein. My Tuna Buckwheat Salad with Lemon Garlic Dressing is one of my fave lunches right now and best of all it only takes 15 minutes to make.

Here’s what you need….

  • 2 cups of salad leaves
  • 1 x 95gram tin of tuna
  • 1/3 cup of buckwheat
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of crushed garlic
  • 1 teaspoons of lemon juice (or to taste)
  • Salt & pepper

Simple Recipes: Tuna Buckwheat Salad

Rinse and drain salad leaves and pop into a large bowl. Cook the buckwheat in a small pot with a small amount of water. I generally let this cook for about 10-15 minutes but it depends how crunchy you like it. Drain and place over salad leaves. Open a tin of tuna and pour the tuna oil into a small pot. Pop the tuna fish over the buckwheat.

To make the sauce, place the olive oil, garlic and lemon into the pot with the tuna oil and heat through (either on the stove or in the microwave) before dribbling over salad. Season with salt and pepper. It’s seriously that easy and takes like 10 minutes and is both healthy and delicious.

Of course you can also add anything else you like to the salad too, like cucumber, tomato, olives, capsicum etc but I’ll be honest, when I took the photos for this one, it was a month or so ago and none of these things were a decent price at the supermarket! I often boil up some eggs and roughly chop a boiled egg or two through this salad if I’m extra hungry.

Another bonus about this recipe is all you need is a bowl, a pot and a drainer. Yay for minimal dishes!
